· MEAT TO THE POT
Another typical of Mendoza dishes is the meat to the pot. Several cuts of meat can be used for this recipe, but the secret to making it perfect is the cooking time, which should be at least 2 hours. The recipe includes thyme, bay leaf and pepper, onion, celery, carrot, garlic, potatoes, butter, olive oil, tomato and, of course, red wine so as not to leave the most outstanding drink in the province without prominence.
At the end of the cooking time the meat becomes super tender. This delight is accompanied by potatoes that are cooked next to the meat, so that they take the exquisite flavor. · HUMITA IN CHALA
The Humita, in general, is one of the most important dishes of the province, but the most served version is the Humita in Chala which consists, basically, of serving the preparation of choclo wrapped in the shawl of it.
Choclo is prepared with butter, black oil, tomato, milk, paprika, grated cheese, salt and pepper. It is then carefully served on two well-to-do cross-shaped shalas and then tied with Band-Aids.
Once this delicious work of art is ready, it is placed to cook in a pot where it boils for about 40 minutes. After that time, it is removed from the water and ready to taste.
